Salmone in Saor alla Veneziana
Venetian-Style Salmon in Sweet and Sour Sauce
Makes 8 appetizer servings
2½ lbs wild salmon fillet, cut crosswise into ½-inch thick slices
Kosher salt and freshly ground black pepper to taste
½ cup potato starch or cornstarch (for dusting)
½ cup extra virgin olive oil, divided
1 red onion, thinly sliced
¼ cup cider vinegar
2 Tbsp raw sugar
¼ cup Zante currants, soaked in warm water to cover until soft, about 15 minutes
2 tsp finely chopped rosemary
½ cup pine nuts, lightly toasted in a 275ºF oven for 8 minutes
2 Tbsp chopped parsley
Sprinkle salmon on both sides with salt and pepper. Heat about half the olive oil in a large, heavy skillet. Meanwhile, dust salmon on both sides with starch; shake off any excess.
Add salmon to pan without crowding, working in batches if necessary. Cook over medium heat 2-3 minutes or until lightly browned at the edges. Using a spatula, carefully flip salmon over and cook 1 minute or until barely firm. Remove from pan and arrange on a serving platter.
Add remaining olive oil and onions to pan and sauté until crisp-tender. Drain currants and add to pan along with vinegar, sugar, and rosemary. Add salt and pepper to taste. Cook 2-3 minutes or until liquid becomes syrupy. At the last minute, add pine nuts, tossing to combine. Pour mixture evenly over salmon. Sprinkle with parsley.
Cover and refrigerate overnight or up to 2 days, allowing fish to come up to room temperature before serving.

Aliza Green is with us this week to long and varied career in the food world. Aliza has been a pioneering chef, a culinary tour leader, and the author of fifteen cookbooks including Making Artisan Pasta, which made the Cooking Light’s Top 100 Cookbooks of the Last 25 Years list. Her career took off in the 1980s as Executive Chef at Ristorante DiLullo, where she earned a prestigious four-star rating. She was later inducted into the Philadelphia Culinary of Fame, which sited her as one of the ten most influential people in the city’s food industry. Moroccan Chicken Tajine with Artichokes, Preserved Lemons & Green Olives
Makes 6 servings
3 lbs bone-in chicken thighs, skin removed
Fine sea salt and freshly ground black pepper to taste
6 Tbsp extra virgin olive oil
1 medium red onion, diced
3 large cloves garlic, thinly sliced
1 (2-inch) piece fresh ginger, peeled and chopped
3 Tbsp Moroccan Tajine Spices (recipe follows)
1 cup chicken stock
1 cup chopped tomatoes
2 preserved lemons (recipe follows, or use purchased)
¼ cup pitted large green olives, cut in half
2 Tbsp chopped cilantro or parsley
Season chicken lightly with salt and pepper.
Heat half the olive oil in a large skillet over medium heat, brown chicken on both sides. Remove from skillet and reserve
Add remaining olive oil to skillet along with onion, garlic, ginger, and Tajine spices and cook over medium heat until onions are soft, about 5 minutes
Pour in chicken stock and tomatoes, bring to a boil. Arrange chicken thighs on top and cook over medium heat until chicken is cooked through, and sauce has thickened, about 20 minutes. Add preserved lemons and olives, cook 2-3 minutes more. Serve chicken with sauce over top. Garnish with cilantro.
Accompany with steamed couscous, rice, or mashed or roasted potatoes.
Moroccan Tajine Spices:
Makes ¾ cup
¼ cup Moroccan sweet paprika
2 Tbsp ground ginger
2 Tbsp ground turmeric
2 Tbsp ground cumin
2 Tbsp ground true cinnamon
Combine all and store tightly covered in a dark place for up to 6 months.
Preserved Lemons
Makes 12 lemons
12 large lemons
3 cups kosher salt
Rinse lemons in hot water. Quarter lemons from the top to within ½-inch of the bottom; pull quarters apart but don’t separate. Generously pack inside of lemons with salt, push quarters back in place. Place a layer of kosher salt on bottom of a sterilized glass jar. Add a lemon, pressing down so lemon releases its juice. Add remaining lemons with salt in between layers.
Allow lemons to cure at room temperature for 30 days, turning jar upside down every few days to redistribute salt and juice. As lemons soften, syrupy juices will form, which should cover the lemons. Keep packing lemons down, adding salt as they ripen so they are always covered with salt and/or juices.
Refrigerate after 30 days. Lemons will continue to ripen, soften, and darken as the sit in the fridge but will still be perfectly good to use for up to 6 months.
To use, rinse lemons as needed under cold water. Remove and discard inner pulp, which will be quite salty. Scrape off inner white pith and discard. Slice, chop or dice the yellow of the lemon to use in recipes.

Steps Toward Contentment
Wake up early and take the time to be grateful for the tiniest things. If you’re tired, go to bed early. If you can’t, try taking a nap. I was never able to nap until I turned 60. Now every other day I take a 45-minute nap. I am refreshed.
Only watch the news in the morning. Hit the high points and get out. If you feel powerless, write a letter to your congressman. Complain to the people in charge. Donate 10 bucks to The World Kitchen. Go through your drawers and donate stuff you never wear. You have power, use it.
Have you tried meditation? Or just take 10 minutes to say a prayer for yourself. I read a little prayer every morning with my cup of coffee. Or write down your own word for the day. Lots of days I read from an old Daily Word from the original Betty Ford Clinic. “I can have the day I want.”
Engage in any type of exercise. Whatever it is: walking, swimming, riding a bike, window shopping. Every step counts.
Put a step counter on your phone or use the one on your smart watch. It will make you accountable. I have double my steps by doing this. I walk to manage my anxiety, which, if left alone, eventually turns into depression. Exercise helps me focus my thoughts.
I worked with Richard Simmons about 100 years ago. He’d say, “Denisey, move more, eat less.” How simple is that? Eating is about needs, habits, obsessions, filling the void, social contacts. It’s huge. If you eat too much and you want to change, write down what you eat every day. A food diary is the only way to know what you really consume. Start with accurate amounts and then tackle calories.
Lisa suggested going sober for the summer…Let’s not be silly…I can agree to one glass of wine instead of two.
Cull your friends list on social media. Negativity is bye-bye. Do you have friends on FB or Instagram that always complain about the same thing? Why aren’t they learning? Worse yet, why are you listening? Would it be helpful if you pointed it out to them? If you do and they are upset, let them block you! Real friends change your life for the good and are there for the bad.
Visualize where you want to be. I am learning to visualize my retirement. It has taken me two years. I loved my work, but I am finally able to say I love not going to work!
And, lastly, if you have mixed feelings about life, or can’t find a happy or contented peace, try talking to a friend that listens, a pastor or a therapist (find one on a sliding scale that can help you). Yes, life is hard and tedious. But it’s also wonderful and exhilarating.
