Michael Twitty is with us this week to talk about ethnic and culinary history, his Southern Discomfort Tour and his books, The Cooking Gene and Koshersoul. Michael is a culinary historian and food writer.
His award-winning book, The Cooking Gene, traces his ancestry through food from Africa to America and from slavery to freedom. In Koshersoul, Michael explores two of the most distinctive cultures in the world: the foods and traditions of the Aftican Atlantic, and the global Jewish diaspora.

Tuscan Olive Oil Cake
Makes 8-12 servings
2 cups all-purpose flour2 Tbsp corn starch1 tsp salt1 tsp baking powder1/2 tsp baking soda1 cup light olive oil1 1/4 cup milk3 large eggs1 1/2 cups granulated sugar1 tsp vanilla extract½ cup lemon juiceZest from 3 lemonsConfectioners’ sugar, for dusting
Place a rack in the center of the oven. Preheat the oven to 350°F. Grease a 9-inch cake pan. Line bottom and sides with parchment paper OR dust it with flour.2. Stir together the flour, cornstarch, salt, baking powder and baking soda in a mixing bowl until well combined.3. Combine the olive oil and milk in a separate bowl.4. Whisk together the eggs and sugar in a large mixing bowl until well combined. Stir in the extract, lemon juice and zest. Stir in the dry ingredients alternating with the olive oil mixture in two or three additions. Use a flexible spatula and mix only enough to ensure that the flour is moistened.5. Pour the batter into the prepared pan. Bake until the cake is set and golden on top, for 45 to 50 minutes. The cake will have risen slightly, and the top will spring back when lightly pressed with a finger.6. Cool the cake for 20 minutes on a cooling rack. Carefully unmold the cake onto a serving plate. Allow the cake to cool completely. Dust with confectioner’s sugar before cutting it into wedges and serving.
Variations:Use any kind of nut or non-dairy milk in place of the whole milk.
Substitute any kind of citrus juice and zest for the lemon juice and lemon zest. Or use a combination. Orange and lemon juice are common. Use limoncello or vin santo in place of the lemon juice too.
Orange flower water, rose water or grappa may be used in place of the vanilla extract.

We continue our chat with Sandra Gutierrez. We talk money, and the re-release of her book, Latin American Street Foods!
Sandra is an expert on Latin American cuisine, a journalist, and a food historian. Her work has been widely published in magazines and in newspapers across the country. Links below to her PBS show, The New Southern Latino Table, and to the Huffington Post article mentioned in the episode.
Her book, The New Southern-Latino Table: Recipes that Bring Together the Bold and Beloved Flavors of Latin America & The American South, is credited with discovering a new culinary movement and her a new culinary movement and is on exhibit at The Smithsonian Museum in Washington DC.
Sandra shares her recipe for Peach Pico de Gallo with us. Fantastic on seafood, pork or chicken!
Peach Pico de Gallo
Ingredients:
1½ cups peeled, pitted and chopped peaches (not too ripe)
½ cup plum tomatoes, seeded, deveined and chopped
¼ cup minced red onion
¼ cup minced cilantro
1 tablespoon minced jalapenos (seeded, if less heat is desired)
Juice of one lime (or to taste)
Salt and pepper to taste
In a medium bowl, combine the peaches, tomatoes, red onion, cilantro, jalapenos, and lime juice and stir well; season to taste with salt and pepper. Serve immediately or cover and refrigerate for up to 24 hours.

Sandra Gutierrez chats with us this week about gaining the confidence to write cookbooks and never giving up. She also tells us about her recovery from a broken neck and not knowing if she would live through surgery or ever be able to move again.

Sandra shares her recipe for Elotes Locos with us. It’s a delicious, quick and easy summer side dish!
Grilled Corn with Crema and Cheese (Elotes Locos)
Makes 6 servings
Ingredients:
6 ears of corn on the cob (very fresh corn)
1/2 cup Mexican crema or crème fraiche
1/2 cup mayonnaise
1 cup crumbled Queso Cotija (or Parmesan)
Ancho chile powder (to taste)
Directions:
Place corn in a large pot of boiling water and cook for 3-4 minutes; remove from heat; set aside. Heat a grill until moderately hot. Grill corn, turning until slightly charred and tender. In the meantime, combine crema and mayonnaise in a measuring cup; set aside. Place crumbled cheese in a shallow plate.
When corn is nicely grilled, remove from grill and wrap the bottom ¼ in aluminum foil (to make a handle. Dip into the crema mixture, rolling well until coated. Roll in the cheese to coat; top with as much chile powder as you like. Serve immediately.

Debra Freeman is back with us to talk about her latest adventures! She has a fantastic new article out on Eater: Freedom, Finances and Fried Chicken, and a delicious new podcast on the Whetstone Radio Collective, Setting the Table.
Debra has written for Plate Magazine, Epicurious, Garden and Gun, Pit Magazine, Gravy, Southern Grit Magazine, and Gastro Obscura, has had her work featured in Huffington Post and The New York Times, and has done cultural commentary for BBC Radio and other international outlets. Freeman writes about the intersection of race, culture, and food.

Even though Black women are the reason you can look at menus all over the country and see fried chicken, the impact of Black women in the culinary space extends far beyond that single dish and needs to be acknowledged. It is clear their hands have touched nearly every facet of what we consider American food, yet their achievements are rarely spoken about or celebrated, let alone celebrated to the same degree as many others in the food space. The skills born of necessity during enslavement later became the tools to support their families and their communities, and because of their skill and culinary innovation, the recipes spread throughout the country, leaving dishes that still endure.
We cannot be certain of the first person to fry chicken in America, but everyone who enjoys the Gospel Bird owes a debt to the Black women who cooked under unimaginable conditions to create a better life for themselves and their families. Without their ingenuity, talent, and knowledge, our nation would be far less delicious.
